Muesli

I have met a new friend, its name is Muesli! Its a really good food. I don't have a great deal of super healthy food to work with where I now live, and I wanted a healthful breakfast food. I researched Muesli a little bit, and embarked on my journey! I soaked oats in water overnight, and the next morning I added half of an apple diced up, cinnamon, and honey. It was quite good! For a couple of mornings I soaked the oats in apple cider we had on hand. Yummy. I also am now adding some vanilla flavoring. In my husband's Muesli this morning, I added a sliced banana instead of a half an apple. Thats the good thing about Muesli is that you can diversify and use what you have! Here is a basic recipe.

1cup rolled oats (soaked overnight, in water barely covering them in your breakfast bowl )
The next morning add to your bowl:
1/2 apple
1/4 tsp. vanilla flavoring
several dashes of cinnamon
1 tsp. honey.
Mix up and enjoy!

Day 1

Food

-2 smallish bowls of chili w/cheese, sour cream, and onions.
-2 small bowls of sweet fruit salad
-2 slices of pickles
-pork and veggie chow mein(no noodles)
-a big helping of pudding cookie pie.
-some crackers

Exercise
-walked about 15 minutes around the circle.

Activities of the Day
-went to class this morning.
-worked in the kitchen doing the salad bar for lunch.
-sat outside and did some reading for a class and enjoyed the beautiful weather!
-Worked with my husband tonight doing the salad bar etc.
-Chose a book from the Library for my Church History Class. I am enjoying learning about Greek Orthodoxy!
-Sat in the coffee shop, and did more reading.
-Walked the circle with some of my friends and my sister.
-Put some clothes away
-Read some fashion blogs.

Wow, its been a While!

So, I think I am going to resume writing on this dear blog, which I have so long neglected! I have had some major changes in my life the last couple of months. August 12 I got married to Eric Avery, and we are now living in Kentucky. I am greatly enjoying my life! My exercise and good eating regimen have gotten by the wayside for the most part though, and of that I am ashamed! So, I am trying to reform and get into really good shape. I plan on using my blog to help me stay accountable, and for other purposes too! I am taking 3 classes, being a pastor's wife, and helping my husband work in the colleges' kitchen. Needless to say, I am not getting quite the whole foods diet I was eating while living and working with the Cambells at Above Rubies. I am trying to stay away from too much carbs, so I am not going completely crazy there, but desserts have been my biggest downfall. They are just so good! I have just very recently gotten to walking for about 30 minutes at night, and I want to get into even more exercise too, so that is my goal! Going for an even more beautiful Temple!

Week 5

Monday:
I walked 5 laps around the circle. I did 3 sprints, 50 sit-ups, 100 leg exercises, and arm weights.
I ate 2 apples, 3 eggs, grape juice, low-carb spagetti, chicken, salad, popcorn, and Diet Mountain Dew. I read my Bible.

Tuesday:
I walked 6.5 laps around the circle, 3 sprints, 30 sit-ups, 30 leg-ups, 100 leg exercises, arm exercises w/weights. I ate apple slices, 1plum, a kefir/fruit smoothie, 2 kefir/spelt pancakes with yummy blueberries, Golden Syrup, real whipped cream, and butter. I also had venison, onions, potatoes, veggies, Zucchini bread, and mint tea.

Wednesday:
I walked 5.25 laps around the circle, 3 sprints, 50 sit-ups, 30 leg-ups, 100 leg exercises, and arm exercises w/weights. I ate 2 apples w/peanut butter, raw milk, 2 eggs, salad, fruit, chicken salad cups, cucumber salad, and nachos w/cheese and organic beef.

Thursday:
I did 50 sit-ups, 100 leg exercises, and arm weights. I had 1qt. of fruit and raw milk smoothie,
2 eggs w/3 cheeses, salad, Kai Sai, Min, and lots of veggies.

Friday:
I didn't really exercise, but I did housework, climbed the stairs a lot, and vacuumed. I ate 4 slices bread, Kai Sai Min, Lamb, potatoes, sweet potatoes, cabbage, cucumber salad, salad, mushrooms, mint sauce, and cheesecake w/berries and cream. Yummy stuff!

Week 4

Lovely fresh pineapple that I had for breakfast this morning! It tasted like I was on a Tropical Island!


Monday:
I ate 1 orange, 3 no-bake cookies, 3 eggs, chicken, salad, veggies, granola bar, 1/2 donut. It rained, so I couldn't hike. I read my Bible.

Tuesday:
I did the "Pumphouse Walk," 50 sit-ups, 100 leg exercises, and some arm weight exercises. I ate a cream puff in celebration of Vange's new baby, and I also ate cheesecake, eggs, salad, Kai Sai Min, veggies, and 1 orange. I did not read my Bible.

Wednesday:
I walked 5 or so laps around the circle, and I did 3 sprints, 50 sit-ups, 100 leg exercises, and arm weights. I had raw milk, 2 eggs, Kai Sai Min, venison roast, onions, brown rice, veggies, 2 slices of sourdough bread, and part of a granola bar. I didn't read my Bible.

Thursday:
I did not exercise. Bad me. I had 1qt. of a banana smoothie, a 3-egg omelette, mutton chops, sweet potatoes, salad, asparagus, and onions. I did read my Bible.

Friday:
I walked 6 laps around the big circle, I ran 3 sprints, I did 50 sit-ups, I did arm exercises with my weights, and 100 leg exercises. I had fresh pinapple, raw milk, apple slices, fresh cheese, healthy snacks, Chai tea, Thai Soup w/chicken and mushrooms, salad, brown rice, bread, and grape juice. I did read my Bible.
Saturday:
I did no exercise! Bad me. I had fresh pineapple, grape juice, a two-fried-egg sandwich, and a piece of chocolate.

Week 3

Sunday:
I had a wonderful Subway flatbread sandwich for lunch. I love them! Then for supper, I had spaggetti and salad. The only exercise I did was walking around the mall!

Monday:
I had spaggetti for lunch, and I had two long walks, and one really hard hike with children along! It was quite an adventure!

Tuesday:
I had a banana for breakfast, I had a really good fruit and kefir smoothie for lunch. I think we had chicken wings for supper, rice, bread, and veggies. ( I think I am correct here) I don't think I exercised! Not good.

Wednesday:
I had some fresh pineapple for breakfast. Lunch was salmon salad and avocado. Very delicious! For supper, we had really good macaroni and cheese, and lots of veggies. Later on I had some fruit too. I did the "Pumphouse Walk,", 50 situps, leg exercises, and some really good arm exercises with my 8lb. weights.

Thursday:
I had strawberries and grapes for breakfast, kefir and spelt pancakes w/Golden syrup, butter, and blueberries for lunch, and for supper I had quiche, salad, cauliflour, cucumbers, and carrots, etc. I only did about 20 or so sit-ups for exercise.

Friday:
I had a really good fruit and kefir smoothie for breakfast, and I had more smoothie and quiche for lunch, and for supper, I had healthy party food like chips and salsa, Triscuits and cheese, a dill pickle, popcorn w/hotsauce, and a healthy cake. The only exercise I had was lots of housework, and running up and down stairs.

Week 2

Monday:
I was tired, so I just did some arm exercises with my 8 lb. weights.

Tuesday:
I went on the "Pumphouse Hike" again. It was good. Then I came back and did
50 sit-ups, and a bunch of leg exercises. Lots of exercise!

Wednesday:
I did nothing! Boooooo me!!! I did go to prayer meeting though. That was good
soul exercise. I ate lots of food though. Spagetti, pizza, chocolate, salads, and
sweet tea! Not really any self-control there!

Thursday:
I was bad and didn't go on the "Pumphouse Hike" in the morning like some of the
others did, so I did 50 sit-ups, and did some good leg exercises! For lunch, I had
eggs and salad, and for supper I had sausages, cabbage, salad, mushrooms, and
okra. It was healthy, but I had too much of it!

Friday:
I didn't have any breakfast. I had some strawberry smoothie with raw milk for
lunch. For supper and snack, I had more smoothie, some chips and salsa, some
popcorn, and two small chicken pieces. I did have a pretty long walk too, so that
was good.

Saturday:
I had a fried egg sorta sandwich for lunch and some raw milk. I had some yummy trail mix (with chocolate) later while we watched a movie. I did 50 sit-ups, 100 leg exercises, and I also did the "Pumphouse Hike!" Yay! Pretty Good week!
